Haupia

You're probably wondering what is "haupia." It's a Hawaiian dessert & it's basically coconut pudding. Vinh was working on his Hawaiian menu (broiled mahi mahi sandwich with lettuce, tomato & tartar sauce served with sliced mango & pineapple) for the SNF [skilled nursing facility] as one of his projects so we decided to do a trial run of it all. He was going to do bread pudding with ice cream for dessert, but my firend Samantha suggested haupia. It's very simple to make. Be forewarned though, the coconut milk has quite a bit of saturated fat so eat in moderation!

Our successfully made haupia =)


INGREDIENTS
1/3 cup sugar
1/3 cup cornstarch
1/8 tsp salt
2.5 cups coconut milk

INSTRUCTIONS
1. Combine sugar, cornstarch, & salt; stir in coconut milk.
2. Cook over low heat, stirring constantly, until thickened.
3. Pour into an 8-inch square pan; let cool; refrigerate until firm.
4. Cut into 2x2 inch pieces & serve on ti leaves, if desired.
