St. Patty's Cupcakes

Jonathan & I successfully led our St. Patty's Day cupcake-making group this week! With that comes the recipe we used with our clients, which was also a big hit with all of our classmates :)

Jonathan & I's first baked cupcake ever!


INGREDIENTS
1-3/4 cups all-purpose flour
2/3 cups sugar
1 package of instant pistachio pudding mix
2 tsp baking powder
1/2 tsp salt
2 eggs
1-1/4 cups 2% milk
1/2 cup canola oil
1 tsp vanilla extract
green food coloring
cream cheese frosting

INSTRUCTIONS
1. In a large bowl, add the flour, sugar, pudding mix, baking powder & salt. 
2. In a smaller bowl, beat the eggs, milk, oil & vanilla together. 
3. Add 10-15 drops of green food coloring into smaller bowl. 
4. Add the dry ingredients (large bowl) into the wet ingredients (small bowl) until the mix is blended.
5. Fill the cupcake cups halfway or 3/4 full. 
6. Bake the cupcakes at 375 for 18-22 minutes. 
7. Cool cupcakes for 10 minutes. 
8. Add food coloring to cream cheese frosting & mix
9. Add frosting & your favorite toppings!

You can replace the pistachio pudding mix with any flavor really :)

YIELDS 12 CUPCAKES
